We are recruiting for a pro-active and motivated individual to lead the team in the kitchen of our campus pub, the Eagle & Ball. It’s a traditional venue in the City Centre, offering an excellent range of food & beverage options. During term time it’s a lively venue and we run frequent events and student nights. The pub is open Monday to Friday, and is frequented by students, University staff and the public. At weekends, the pub is available for private hire
You’ll be leading a small but effective team (including student casual staff) and will have autonomy to manage all aspects of the kitchen including staff training, operations management, product development. We are looking for an individual committed to high standards of operations and exemplary customer service. Typical working pattern will be Monday – Friday, with the occasional weekend day (for private hire). The pub closes over the Christmas and New Year period offering great work-life balance in the hospitality industry.
Principle purpose of job
1. To produce an extremely high standard of food
-
Ensure that the menus are ready and that all food is fully sourced and costed up accurately
-
Manage on a daily basis all aspects of the Eagle & Ball kitchen
-
Produce full menu cards for each and every item to ensure excellent product continuity
-
To ensure that all food is prepared and excellently presented at all times
-
Plan menu’s in keeping with the seasons and the themes of events in the outlet
-
Provide excellent Management of and Training of all staff working in this area of the outlet
-
Be responsible for the correct staffing of this area and achieving the agreed budgets for the kitchen
-
Ensure that agreed timings for food leaving the kitchen are adhered to and monitored
2. To ensure the kitchen conforms with all areas of H&S and Food & Hygiene legislation

Ensure that all staff who work in this area are fully trained in all aspects of Health & safety and are fully complicit in all areas of Food & Hygiene

To continually train and retrain staff throughout the year
-
Maintain high cleaning & storage standards in all areas belonging to the kitchen
-
Ensure all necessary paperwork is kept up to date and ready for inspection
-
Ensure all EHO requirements are understood and adhered to and that all inspections both internally and externally are graded as good and above

To ensure that a high standard of personal hygiene and that of all staff in the area is maintained at all times

Ensure that all equipment is working correctly, serviced in a timely manner and maintained and stored in the correct way
3. Responsible for the control of stock levels, ordering and wastage

Ensure that all menu items are available at all times
-
Take responsibility for the security of the kitchen area and the safe storage of food
-
Maintain an appropriate level of stock at all times
-
Ensure that all deliveries are checked and signed for to avoid short deliveries
-
Retain wastage at an agreed budgeted level
-
Ensure all ordering is timely and at the correct levels to be able to store and reduce wastage
-
Ensure all wastage, transfers and deliveries are recorded correctly on the EPOS system

Continually monitor portion control and carry out selected item stock takes to monitor stock levels
4. General Duties

Committed to working as part of a team, and in collaboration with the wider BCUSU staff team, to support the delivery of BCUSU’s Strategic Plan

Follow all University and BCUSU H&S policies, including lone working, and complete all mandatory training

Complete any other training and supervision sessions identified as beneficial to the job role or post holder when required

Maintain full compliance with BCUSUs administrative and financial systems and procedures

Ensuring BCUSU’s aspirations to reduce our environmental impact are delivered

Make decisions within the defined level of responsibility

Effectively communicate with University Staff, Students and relevant external stakeholders

Undertake other duties that may be assigned by the employer, as might reasonably be expected within the grade of the post
